I hate to waste the nice stalks of broccoli. My family doesn't like to eat the stalks steamed, is there another way I can incorporate this into another dish? In a soup perhaps?

Broccoli Chicken


serves 2 - 4.


INGREDIENTS:


3/4 - 1 pound boneless, skinless chicken breasts


To Velvet Chicken:


1 large egg white


1 tablespoon cornstarch


1/4 teaspoon salt


Sauce:


2 tablespoons oyster sauce


1 tablespoon light soy sauce


1 tablespoon dark soy sauce


1 tablespoon water


To Cook Broccoli:


1 pound broccoli


1/2 cup water


1/4 teaspoon salt, or to taste


1/2 teaspoon granulated sugar, or to taste


Other:


2 garlic cloves


1 teaspoon cornstarch mixed with 1 tablespoon water


2 cups plus 4 tablespoons vegetable or peanut oil, for frying


PREPARATION:


1. Cut the chicken into 3/4 to 1-inch cubes. In a bowl, mix together the egg white, cornstarch and salt. Add the egg white mixture to the chicken cubes, tossing or using your fingers to coat the chicken in the mixture.

Marinate the velveted chicken in a sealed container in the refrigerator for 30 minutes.


2. While the chicken is marinating, prepare the sauce and vegetables: for the sauce, mix together the oyster sauce, light soy, dark soy, and water in a small bowl and set aside. In another small bowl, mix the cornstarch and water thickener and set aside. Wash and drain the broccoli. Cut the stalk diagonally into thin slices. Cut the flowerets into 3 or 4 pieces. Crush the garlic.


3. Preheat a wok. Heat 2 cups oil in the wok until it reaches 275 degrees Fahrenheit. (Test the heat by placing a piece of chicken in the wok - it should float). Add the chicken cubes, and let cook until they just turn white (about 30 seconds), using a wooden spoon or chopsticks to gently separate them. Quickly remove the chicken cubes from the wok as soon as they turn white, and drain in a colander or on paper towels.


4. Drain the oil out of the wok or preheat a second wok on medium high to high heat. Add 2 tablespoons oil. When the oil is hot, add the crushed garlic and stir fry for 10 seconds.


5. Add the broccoli, sprinkle the salt and sugar over, and stir fry briefly, turning down the heat if necessary to make sure it doesn't burn. Add the 1/2 cup water, and cook the broccoli, covered, for 4 - 5 minutes, until it turns a bright green and is tender but still crisp. Remove from the wok and drain.


6. Clean out the wok and heat 2 more tablespoons oil. Add the broccoli and the velveted chicken, stirring and tossing to cook the chicken through. Add the sauce and cornstarch mixture in the middle of the wok and stir quickly to thicken. Mix everything together and serve hot over steamed rice.

Reply:in a soup it's delicious, provided that you cut it thinly and/or peel it. Or otherwise you can mash the stalks in this way: boil them in salty water and 1 clove of garlic until tender. Remove stalks and garlic, blend them with 1 anchovy in oil (anchovies in oil come in small jars), add some of their water if necessary to adjust consistency, 1 tablespoon of extra virgin olive oil and a pinch of salt. It's delicious with grilled swordfish or halibut or monkfish. The other option would be to deepfry the stalks.
Reply:Soup works. You can also peel the stalks with a vegetable peeler to get rid of the tough stem. You can cut the stalks into matchstick size pieces and use these as garnish or in salads.

1/2 cup shredded red cabbage


1/4 cup chopped cashews


1/4 cup raisins (optional)


3 T. seasoned rice wine vinegar


1 T. sugar


1 T. orange juice


5 T. olive oil


Salt and Pepper





1. Trim the ends of the broccoli stalks and remove all leaves. Shred enough to make 3 cups.


2. Add 1/2 cup shredded carrots.


3. Add 1/2 cup shredded red cabbage.


4. Add chopped cashews.


5. Add raisins if desired.


6. Make dressing: Whisk rice vinegar, sugar, and oj. Add olive oil slowly while whisking.


7. Pour over vegetable slaw. Season with salt and pepper to taste. Refrigerate until ready to use. Makes 8 servings
Reply:Ummmm. Cut them to bite size pieces and saute with butter and top with seasoned bread crumbs (aka polonaise), or saute with bacon and onion.





Soup is good, many ways and recipes.





Blanche till tender and then cool, toss with a favorite dressing and sliced mushrooms for a cool salad instead of Cole slaw.





Leave whole, wrap in bacon and bake till tender.





Tip: wash and let air dry, then freeze. It will soften the outside for quicker cooking.





Mince or puree and incorporate into stuffing, even Stove-Top, or with rice and cheese.

Chipmunk ate the stalk of my lily plant. Can I save it?

A chipmunk dug a whole around my lily plant and ate the stalk and it broke off under the ground almost at the root. I have the plant stalk in my house in a vase full of water in hopes that it will still bloom. It is 3 1/2 feet tall with so many buds, I have to see it bloom! Is there something I can do to help save it. Will it come back next year now that this happened?

How would I go about identifying a strange plant in my garden: straight stalk, large velvety leaves?

Last year, it came up "voluntarily" in my garden. It has a very straight, very sturdy stalk about 3 feet high, with large, velvety leafs. I didn't see any flowers, and there was no fruit. The stalk withstood the winter, and now the leaves are growing like mad. I tried to pull it, but it is a very strong plant, with good root structure - apparently not a weed. Anyone have any ideas?

We are betting that this plant is mullein, used for chest congestion and infections in a tea but do not use it unless you know what you are doing. They are very common plants along the roadsides here in WI. First year plants never develop the stalk only velvety leaves. It should flower on the stalk with little yellow flowers.


It is a bi-annual and a moderately prolific plant that reseeds itself.

Do people eat only the leaves of spinach or also the stalk?

Someone told me that only the leave sof spinach ahve to be eaten and the stalk discarded. Is it true?And why?

If you are making salads, the uncooked stalk is usually discarded as it is chewy raw. But in stir frying or braising the stalk can be eaten.


My mother has been feeding me cooked spinach since I can remember and we eat the stalks along with the leaves.


The other reason that most people don't deal with the stalk is that it hides sand and dirt at the base and requires extra work to wash and clean properly.

Reply:I think that for salads, traditionally only the leaf is used, but if it is cooked (especially if it is the chopped up kind find in the freezer section) the stem may be there. I think the reason behind this is that uncooked, the texture isn't terribly appealing and it probably just doesn't look that good.

When making fresh spinach, take the leaf and fold it closed in half with the stem running down the fold. Then just hold the leaf part and zip off the stem.

I assume you have a "Lucky Bamboo"? You put it in a vase of water. This plant is actually a type of Dracaena, not a true bamboo. If the bottom part of the stem is going yellow you can help the remaining live portion last a little longer. You need a sharp pair of hand pruners or a really nice sharp kitchem knife. Cut off the bottom yellow part of the stem and a little bit (1-3cm) of the green stem...so that water can flow into the healthy tissue.


Add 2 tablespoons of hydrogen peroxide to the water, and try to refresh the water once weekly. Good luck!
Reply:I think you need to talk to someone at a good nursery. Bamboo is tricky. If it is getting black stripes on it, it may be black bamboo which is very pretty. The stalks (culms) turn black but the leaves stay green.

Probably you can use mushroom stock and get a result that is somewhat beef-like. They sell it in some supermarkets. I think it is one of the "better than bullion" products. Or here's a recipe:

Vegetarian French Onion Soup





4-6 servings





3 T butter or olive oil


4 large white onions, thinly-sliced


1 t salt


½ t dry mustard


dash of thyme


5 cups vegetable stock and/or water


2 T soy sauce


2 T dry white wine (optional)


white pepper


croutons or stale French bread


cheese: Gruyere or Swiss, grated or sliced





Melt the butter in the wok, saucepan, or kettle at medium heat. Add onions and salt, cook for 10 minutes, stirring occasionally. Add mustard and thyme, stir well, cover. Simmer over very low heat for 35 minutes. Add stock or water, soy sauce, optional wine, and pepper. Simmer for another 10 minutes.





Ladle the soup into bowls and top with croutons and cheese. If your bowls are oven-proof, you can then place the dishes under the broiler for a minute or two to melt and brown the cheese.

(Ingredients Per Person):


1 medium onion


2 cloves garlic, minced


1 tbsp. organic canola oil


Fresh ground pepper (to taste)


2 1/2 c. vegetarian "beef" broth (look for vegetarian bouillon flavored like beef)


1/4 c. dry white wine (optional)


1 tbsp. sherry (optional)


1 slice whole grain bread


1-2 slices of provolone cheese, Swiss cheese, or gruyere cheese





Cut the onion in half lengthwise. Then slice each half thinly and toss the slices into an enamel or stainless steel saucepan. Add oil and saute at a high heat. Add garlic. Stir occasionally, until onions are translucent.





Add broth, wine, sherry, and pepper. Bring the broth to a boil, then lower heat.





Ladle the soup into individual bowls. Place a slice of bread in each bowl and add cheese on top of the bread. Microwave each bowl for 1 min or until cheese is melted. Serve immediately.





Tips


To make your soup more authentic, use a slightly stale baguette instead of whole grain. Once you ladle the soup into (oven-safe) bowls, add the bread and cheese and broil them until the cheese is slightly browned and crispy around the edges.





For an untraditional French onion soup, add other vegetables like carrots, mushrooms, or celery. You might also want to add whole grains like barley.





If you can't find vegetarian "beef" broth, try this: use vegetable broth and 2-3 tbsp. vegetarian worcestershire sauce per serving. Optionally, add 1/2 tsp. soy sauce as well.





The vegans I've consulted say they would make this soup vegan by skipping the cheese. If you want to give it a go with vegan cheese, I am told Follow Your Heart monterey jack or mozzerella might be your best bets.

The stalk of the flower of my amaryllis plant was bent way to the side for some reason. I went to lift it and the stalk with the flowers on it broke off. Is the bulb okay, and will another stalk grow in its place in time?

'Naked Lady' Amaryllis meets your description. I have seen them on the Central Coast of California.
Reply:I have these flowers in my yard. I don't know the botanical name for them but I call them Surprise Lillies. Some people call them Resurection Lillies. The green leaves pop up in the early spring then die off. Later in the summer long stems shoot up and have light pink flowers on them. Hince the name Surprise!!!

Reply:If the plant is otherwise healthy, Just mound more dirt around it. The plant will be stronger for it.
Reply:If tomatoes have sprouted then most likely it is their weight that is causing the stalks to split.





Generally, when I grow tomatoes I attach the spine of the plant to a stick/board so that the plant has some additional support.

Why is my indoor-bamboo stalk turning yellow?

I've got 3 growing together in a vase surronded by marbels on the bottom. It's got water. 2 of the three have turned yellow moving up the stalk. Both stalks have green leaves that are in good condition. Any ideas?

They are dying, I have found nothing that will stop this process. Mine started like yours. It is important to remove the ones that are turning yellow-or it will spread to all and kill the other stalk's....
Reply:Its dying. To prevent this in the future you need to clean the bowl and all the rocks about once a month..Also cut off any dead leaves and roots. This will help the bamboo from getting a fungus and it also promotes regeneration of healthy leaves and roots. There is also a fertilizer you can buy at any store that sells bamboo. you just put 10 small drops a week. It will eventually die but doing these steps will help keep healthy bamboo alive longer. Sorry to hear about your bamboo.


What kind of plant has a leaf just like a rhubarb leaf, but lighter in color, and the stalk is much thinner ?

My friend picked out a leaf outside our home and stated that it was a rhubarb plant. These plants are look alikes that have a much narrower stalk. He believed that if the plant was taken care of that the stalk would've grown to the regular width. I know it isn't the rhubarb plant, but I don't know what kind of plant to tell him it actually is. The main leaf, like a rhubarb leaf is big and venous looking, but not as dark as the rhubard, but a medium to light green. The stalk of the plant is a quarter of an inch thick with slight redness near the base of the 8 - 12 inch stalk. It is so unlike rhubarb to me, but he's convinced that it's an uncultivated rhubarb and that is why the stalk is so narrow. Does anyone have a clue what it is called? We are in Alaska, and the plant is growing near a grassy area. There were three growing about 5 - 9 feet away from our rhubarb.

Reply:It could be a member of the celeraic family - a wild celery -they like the marshy/sandy conditions that a rhubarb thrives in - the leaves are similar in shape .the plant stalks can be a bit wiry , but have that distinct smell when the leaves are crushed. Report It

Almost always there is only one fully developed ear. There may be two on some hybrids or in really good growing condition. But any farmer can tell you, those "extra ears" are not developed, they are mostly cob and husk. Might look like three or four ears...but only one (two maximum) that is usable.

You shouldn't need to remove the steering wheel, if you remove the steering column cover you should then be able to remove the stalk.

If you cut the stem back to the second node below the flowers you will have a chance at another flower spike. Since yours is already dead you will need to just cut it off. My phalaenopsis orchid is on its third spike from the original bloom that started last March. Just keep your orchid watered and fertilized and you will get another in about a year. They do best in an area of bright indirect light and a fluctuating day and night temp. Warm during the day and cool at night. Good luck and next flower spike make sure you cut it back to the second node and you may get another flower spike. Here is a site that you may find helpful. Enjoy your blooms!

Reply:Just cut off the stalk at the bottom. Fertilize the green leaves when no blooms present then wait. It can take a full year to get another bloom. Be patient.
Reply:It sounds like you have a phalaenopsis orchid.Cut the flowered stalk down to about 5cm ,then move the plant into a colder room (5-6 degrees colder) for a couple of weeks. This will trick the plant into thinking it is going through a winter.Bring it back into the warmer room and hopefully it will flower again. Good luck!
Reply:They often flower only once a year so don't be too eager. Buy some proper orchid food and give it plenty of light and moisture, not too much don't drown it, it will grow new leaves then another flower spike same time next year. Cut the old ones off.
Reply:Trim the spike down some orchids take a year to rebloom, water every week, fertilize monthly, and keep in bright light, not direct sunlight.

Definitely leave the stalk on...and try to cook the corn as quickly as possible. From the moment that corn is picked, its natural sugars begin turning to starch, so the longer it sits, the tougher and less sweet it will be!
Reply:One more way, peel the leaves back and remove the silks by twisting off and pull back up the leaves, freeze and when you are ready to cook put in a paper sack in the nuke for about 3 minutes, then take the leaves off and you have mmmm corn.


Fresh, boil your water, drop your clean ears in and boil 4 minutes, cover and remove from heat source and leave sitting in water till ready to serve.

Never cut the flower stalk on any variety of bromeliad. Let it die of its own accord, then cut it back. The plant uses enormous energy to produce the flower stalk and will "reclaim" it from the spent stalk, if allowed to do so. Your plant will flower again much sooner if you'll let nature take its course.

OK. I'm really not sure what you mean with the wax, but I'll try and answer your question. By common misconception, its not even bamboo, it belongs to a very large family called dracena. If what you are doing involves taking cuttings and starting them, I would recommend cutting them directly below one of the sections and letting it dry out for a few minutes or an hour to seal the cut so you will minimize the chance of it rotting after you place it in distilled water only. It doesn't have to be completely full of water all of the time, but try not to let it dry out completely. It should root out within a couple of weeks.

Is it strange to be friends with a stalk of celery?

I know its weird but what do you think. He is my best friend. I would never do anything to hurt Cel the celery stalk. Would you be creeped out of I asked you to go out to eat with us some day?
