Can you freeze Fresh Corn off the stalk?
Yes! Just shuck it and desilk. Freeze in freezer bags. We've done it that was for years and it works great.
Reply:You can, but it is much better if it is blanched first. I have been a corn farmer for 47 years so I know a little about it.
Reply:No. You have to blanch it first.

Reply:When I was growing up, we froze hundreds of pounds (over the years) of fresh, uncooked/blanched corn that was husked and de-silked. We froze them in ziplock freezer bags, and later vacuum-sealed bags. Worked great.
