Does rhubarb have to be red all the way up the stalk for it to be ready to pick?

Thhis is the first yr my rhubarb is doing good ive made one pie with it and my strawberries that turned out delisioso.But my husbend says when i pick them they arent ripe,they have to be red all the way up.Help us in our new endevor.

Does rhubarb have to be red all the way up the stalk for it to be ready to pick?
Generally they are only red when they are young so your husband is technically wrong. As the stalks get older they turn greener. It is best to pick for pies when young and red. If you wait until the stalks are older and green you can make a sauce similar to applesauce, using the same method. Wash, cut, and boil the rhubarb. Mash and stir with a potato ricer and sweeten to taste with sugar.
Reply:It's better to pick them when they're smaller - when the stalks get big, they get tough and stringy.

when it is ready to be picked it should be about


1" wide or wider....


the little scraggly ones are not ready yet....
Reply:If you wait for the entire stalk to be red, you risk them rotting. Mostly red is how I gauge when to pick them.
